Finally! A Vegan Cookbook Even Your Kids Will LOVE
There is something very nostalgic and comforting about flipping through a cookbook you trust. One of my favorite family cookbooks that is practical, healthy and of course delicious, is Isa Does It by Isa Chandra Moskowitz. Not being a vegan, I was extremely hesitant to give this cookbook a chance. For those of us who are not vegan, the word can hold a bold and sometimes intimidating label, especially when it involves you doing the cooking. Not only are Isa's recipes impressively delicious, but her directions are straight forward and easy to follow. Many of her recipes are vegan replications of your favorite comfort foods growing up, such as rigatoni, risotto, dumplings and sloppy joes. Yes, I said it, sloppy joes (without the regret). Her insanely delicious white wine risotto would fit right in at a mom and pop Italian joint, and her seasoned lentil tacos will have your children questioning if lentils are a type of bean or a beef. Those who are lactose intolerant will especially appreciate her non-dairy recipes that achieve such creamy consistencies. I highly recommend giving the cookbook a shot. Remember you don't have to be a vegan to eat vegan sometimes. Trying these recipes together is a wonderful opportunity to introduce your family to creative and innovative ways of cooking healthy.
How can you get a creamy consistency without the cream?
Cashews + water! First soak 1/2 cup raw cashews in 1 cup of water for 2 hours or overnight. Then, add the cashews and water in a blender or food processor. Blend until you achieve a thick and creamy consistency. The result leaves me amazed every time! I have even startted to replace butter and heavy cream with this trick in many of my favorite comfort food recipes from my childhood.
